This is a cocktail created by Laurynas Lazdauskas, the cocktail mixologist from NHow Hotel. In the National Cocktail Competition held by NBC on 3rd September, 2024, Laurynas, with his exquisite technique and presentation, won the bronze medal. Everyone is welcome to give it a try.

According to the requirements of the cocktail competition, the participating cocktails must meet the following criteria:

• Use spirits and liqueurs determined by a random draw;

• Have a balanced taste, reasonably showcasing the characteristics of the sponsor’s products;

• The cocktail design must be accompanied by a logically sound presentation;

• On the technical side, a specialized judge will supervise the entire cocktail-making process, evaluating aspects such as whether there is any wastage of ingredients, the bartender’s posture during shaking or stirring, and so on.

Laurynas is a gifted mixologist. He explained to the judges with his understanding of Baijiu and Gin Amis, and why and how he mixed them.

Gin Amis is created in Amsterdam. With the innovative spirit of the Dutch distiller, Gin Amis tried a very mind-blowing combination of spices.

Shuntun Baijiu is crafted from a blend of five grains—sorghum, wheat, rice, glutinous rice, and corn—fermented with naturally occurring wild bacteria and yeast, known as Qu. This process takes place in an underground fermentation pit for over 45 days, and the baijiu is then aged in unglazed porcelain jars. It is considered one of the funkiest spirits, surpassing even the boldest rums in its unique flavor.

Appearance

A vibrant lemon-yellow with a hint of green, topped with a fine layer of even bubbles, and garnished with a single basil leaf, offering a refreshing and natural visual appeal. As autumn arrives, this drink captures the essence of our wish to hold onto the last bright moments of summer.

Nosing

Upon first encounter, the nose is greeted by the distinct funkiness of Shuntun Baijiu, delivering mild and pleasant earthy and fermented grain notes. These are quickly followed by the fresh, crisp citrus scent of lime juice, which brightens the overall profile. The herbal and slightly peppery aroma of the basil leaf garnish rises delicately, adding a refreshing and green touch. Underneath it all, the botanicals from Gin Amis—juniper, spices, and subtle floral hints—provide a soft backdrop, rounding out the aroma with elegance and depth. Together, these elements create a vibrant and inviting bouquet that sets the stage for the cocktail’s pleasant flavors.

Tasting

The first sip reveals the characteristic taste of Shuntun Baijiu, with its earthy and slightly funky profile, complemented by the botanical notes of Gin Amis. The sharp acidity of fresh lime juice cuts through the richness, bringing a crisp and refreshing balance to the drink. The basil leaf garnish not only adds a fresh herbal aroma but also enhances the complexity of the flavors, offering a subtle green note that lingers on the palate.
