The Big Belly Bar

The Big Belly Bar is a bar together with a local brewery, the beer on taps are mostly brewed by themselves. This restaurant-bar boasts a grand and spacious interior, offering a low dining density for guests. It also features its own backyard. The burgers here are known for their distinct and rich layers of flavor.

The Bartender

Anthony climbs up to find a drink to pair with baijiu.

Anthony Hinoke loves pink! As long as it is possible, he would always make the cocktail PINK. He told me he started with the traditional cocktails, then slowly twist on them.

Anthony also tells me that he is ⅛ of Chinese while 1/16 of Japanese.

The Cocktail: Pink Pride

Appearance

The cocktail presents a vibrant and inviting color, reminiscent of a sunset with its deep pinkish-red hue. The garnish of dried strawberry or raspberry adds a touch of elegance and visual appeal, hinting at the flavors within.

Aroma

The initial aroma is a delightful bouquet of floral and fruity notes. The combination of St-Germain and floral bitters provides a fragrant backdrop, while the raspberry syrup adds a sweet and tart berry essence. A subtle hint of lime juice cuts through, adding a refreshing citrus twist.

Taste

Upon the first sip, the complexity of this cocktail unfolds. The Shuntun Baijiu introduces a distinctive and robust character, beautifully balanced by the smooth and clean profile of Tiscaz Tequila Blanco. The elderflower liqueur, St-Germain, lends a delicate sweetness and floral complexity, harmonizing with the raspberry syrup’s fruity richness. The lime juice adds a zesty acidity that brightens the overall flavor, while the floral bitters contribute a nuanced, aromatic depth.

Mouthfeel

The cocktail has a smooth and silky texture, with a well-rounded body that is neither too heavy nor too light. The lime juice and raspberry syrup provide a slight tartness and sweetness that dance on the palate, while the bitters add a subtle dryness, creating a balanced finish.

Finish

The finish is long and satisfying, leaving a lingering impression of the floral and fruity elements. The dried strawberry or raspberry garnish enhances the final notes, offering a gentle reminder of the cocktail’s layered complexity and refreshing nature.

Overall Impression

This cocktail is a masterful blend of robust and delicate flavors, creating an experience that is both refreshing and intriguingly complex.
