The Boathouse

The Boathouse is a bar and restaurant with high ranking on Google Map. The ambiance within the bar and restaurant is cosy. Due to summer hot, most of clients are enjoying their beer, cocktail and food on the terrace by the canal.

The Bartender

Jelle is a young bartender who has honed his skills primarily through self-learning and continuous practice. When I asked him to create a new cocktail using Baijiu, a Chinese spirit he had never heard of, he seemed a bit unsure at first. After a moment of contemplation, he immediately agreed and began following a standard process he had set for himself.

I explained to him what Baijiu is. He opened a bottle of Shuntun Baijiu, poured some out, and took his time to look, smell, and taste it. He asked me how others typically use Baijiu in cocktails. I told him there are many ways. Some people prefer to mask Baijiu’s unique aroma and flavor, while others like to highlight these differences to create distinctive new cocktails. There are also those who play with temperature to gradually reveal Baijiu’s flavors. Then, I showed him the column dedicated to the PANDA cocktail.

The Drink

Appearance

This cocktail is served in a metal cup, drawing visual attention to the rim area. It is garnished with a semi-spherical dried lemon and fresh mint leaves, evoking a sense of a long sea voyage where fresh lemons are scarce but fresh mint is discovered on a small island. This gives the cocktail a playful, self-entertaining vibe as if concocted in an oasis. At this moment, I feel as if I am somewhere in Southeast Asia.

Aroma

The scent of dragon fruit combined with mint creates an aroma reminiscent of sliced cucumber, offering a very refreshing fragrance.

Taste

The cocktail features the sweet freshness of dragon fruit, the tanginess of lemon, and the effervescence of ginger beer, which softens the Baijiu while the bubbles mimic Baijiu's slight kick.

The Recipe

  • Shuntun Baijiu 25 ml
  • Dragon Fruit Syrup 25 ml
  • Green Lime Juice 30 ml
  • Bitter Angostura 3 dahses
  • Ginger Beer 100 ml or more, to fill up the cup, more or less can be decided due to strength of the drink you want.
  • Garnish: Dry lemonade and fresh mint
  • Shake with ice
