Emily has once again demonstrated her unparalleled mastery of foam, delivering a cocktail that transcends cultural boundaries. In this latest creation, she skillfully bridges two traditional spirits from the Netherlands and China: Shuntun Baijiu, a strong aroma Baijiu, and Bourbon Cask Aged Hoornse Oude Genever, resulting in a harmonious celebration of tradition and innovation.

Background: A Tour of Inspiration

It all began with Simon’s expert-guided exploration of the cocktail bars in Utrecht. The vibrant atmosphere, combined with the rich histories of the spirits, set the stage for something exceptional. When Shuntun Baijiu and Hoornse Oude Genever were introduced to Emily and her colleague Mariza, the room seemed to come alive. Both were captivated, their eyes sparkling with inspiration as they sampled the rich, layered profiles of these exceptional spirits.

Although Emily hesitated initially, overwhelmed by the potential of the flavors, a nudge of encouragement set her creativity into motion. Trusting her instinct—a spark of divine inspiration, perhaps—Emily embraced the challenge and delivered something extraordinary on the spot.

SHUNTUN Baijiu: 35 ml

Hoornse Oude Genever: 30 ml

Liquor 43 (Cinnamon-Infused): 25 ml

Mango Puree: 15 ml

Frangelico Cacao Cream Foam: Generously layered on top

Cacao & Cinnamon Powder: Lightly dusted for garnish

Emily named this daring creation “Sin of the Day”—a reflection of its indulgent and evocative nature, as well as the flavor and taste were so attempting that you might not be able to refuse to order one. As Emily uttered the name, her eyes lingering on the cocktail before her, it was clear she took immense joy in her creation.

Tasting Notes: Sin of the Day

Appearance

A visually striking cocktail that invites curiosity. The creamy layer of Frangelico Cacao Foam sits elegantly atop the drink, crowned with a fine dusting of cacao and cinnamon powder. Its golden-hued body, tinted by mango puree and the cinnamon-infused Liquor 43, evokes the warmth of sunset—both comforting and alluring.

Nosing

The aroma unfolds in layers:

1. The first wave is a warm blend of cinnamon and cacao, promising a dessert-like decadence.

2. Following closely is the fruity brightness of mango puree, which contrasts the deeper, nutty undertones of Frangelico and Genever.

3. The unmistakable floral and savory complexity of Shuntun Baijiu rounds out the bouquet, mingling beautifully with the herbal richness of the Genever.

Tasting

On the palate, “Sin of the Day” is an intricate symphony of flavors:

• The Shuntun Baijiu asserts itself with its bold, fermented grain and floral depth, while the Genever adds a velvety, oaky smoothness.

Cinnamon-infused Liquor 43 provides a spicy-sweet middle, elevating the fruity brightness of the mango puree.

• The creamy foam topping integrates notes of cacao and hazelnut, softening the edges of the spirits and giving the drink a luscious, dessert-like finish.
